Brown County IGA No. 449, 30 Hawthorne Ave.: One critical violation, to be corrected now: Chicken strips in hot holding unit reading 121 to 125 on top layer in pan. Lower layer strips were all over 135 degrees. First layer was set aside and employees instructed to discard at 4 p.m. as strips had been prepared at noon using time as temperature control as an exception — unit to be increased in overhead temperature and temps checked regularly. Three non-critical violations: Thermometers missing in deli cold-cut salad cooler and freezer deli unit; milk room has spilled, dried debris on floor, fan cover deli cooler dusty, fan cover large produce cooler dusty, all to be corrected now; attempted repair on loading door gap not complete — daylight showing here and on back door, repeat violation, to be corrected by April 30.
